Our version of the iconic Swedish Princess Cake! The familiar silhouette and components remain, but everything within it has been reworked - reimagined as a nourishing, low-glycemic, gluten-free, vegan truffle!
In our reimagining of this classic pâtisserie, the familiar green dome is achieved not with dyed marzipan, but with a smooth white chocolate shell, naturally tinted with spirulina - vibrant, clean, and true to its instantly recognizable silhouette. But the marzipan has been far from replaced - rather it has also been reimagined, and has migrated to the interior where it takes on a central role, standing in for the traditional vanilla sponge cake. Our marzipan is made of regenerative organic almonds from Burroughs Family Farms - rich, tender, and deeply satisfying - layered with a bright, house-made raspberry jam that brings just the right lift. At the crown, a soft pink rose rests in full bloom, crafted from strawberry-infused white chocolate - a nod to the indispensable garnish.
The result is at once elegant and nourishing: gluten free, thoughtfully composed, and designed to be savored as part of the ritual of tea.
