Coffee and chocolate share a remarkable history. Both begin as humble seeds, nurtured in tropical landscapes and transformed through craftsmanship into some of the world's most cherished pleasures. For centuries, they have fueled conversation, inspired creativity, accompanied study and reflection, and brought people together around tables both grand and modest. Though born on different continents, they seem destined for one another.

As with all our ingredients, these beans have been rigorously tested for pesticides, mold, and heavy metals. They are also naturally low in acidity, making them gentler on digestion than many other coffees. Please note, they are quite strong!

Single-origin organic Guatemalan coffee beans, grown in the highlands of Huehuetenango beneath a canopy of guava, plantain, and banana trees, naturally develop nuanced fruit undertones alongside notes of caramel and dark chocolate. The beans are carefully roasted only to a medium level in order to preserve the character and complexity of the terroir rather than mask it. They are also Smithsonian Bird Friendly Certified, supporting farming practices that protect biodiversity and migratory bird habitats.

As with all our ingredients, these beans have been rigorously tested for pesticides, mold, and heavy metals. They are also naturally low in acidity, making them gentler on digestion than many other coffees. Please note that they are quite potent! If you are sensitive to caffeine, we recommend beginning with just 2-3 beans.

Each bean is enveloped in a generous layer of our 70% dark chocolate, creating a beautiful marriage of deep cacao richness and vibrant coffee character. A small but mighty indulgence.

Since the first bar of chocolate I made for the Institute for Integrative Nutrition in 2006, Gnosis has grown 100% organically by word of mouth. We believe a company should invest only in the quality and integrity of its work - not in paid advertising. Our customers become our valued ambassadors!

We partner with mother nature and small producers to bring you what we like to call botanical alchemy: functional chocolate. In fact, we visited our sources and were a founding member of the Heirloom Cacao Preservation Fund. We support Herbalists Without Borders, and believe access to herbal medicine and education on preventative wellness is our birthright.

We make our chocolate with Love, by hand, gift wrap every order, and use only clean, whole, organic, low-glycemic, vegan ingredients (no gluten, dairy, soy, peanuts, or GMO) and heirloom cacao beans sourced with great care.
