The Gnosis Bunny population has flourished, and recent expeditions have documented several delightful litters roaming the chocolate wilderness.
First to be spotted were the Classic Cacao Bunnies - the noble 70% Dark Bunny, the velvety Mylk Bunny, and the golden-hued Caramelized Whyte, often found grazing together. Nearby you may encounter the Date-Sweetened Bunnies, a gentle pair consisting of Pure Date Bunny and the fragrant Date Earl Grey Bunny, with its sweetness carried on notes of Italian bergamot. In the flowering fields, observers report sightings of the White Bunnies - Pure Creamy White, the other blushing with Strawberry. A rarer creature has also emerged: the Monkfruit Bunny, naturally sweet and famously elusive. And for the most devoted cacao explorers who don’t mind a bit of roasting, whispers circulate of a 100% Dark Bunny from Ocumare, Venezuela -revered among true chocolate naturalists.*

100% DARK: 100% cacao beans, a soft, furry debut of our chocolate made of beans from Ocumare, Venezuela by someone I am proud to call my friend, Art Pollard, who personally selected, roasted, winnowed, and ground these precious beans with loving kindness. Art and I have been friends for about 15 years now, I visited his chocolate factory in Oren, Utah myself. We have gathered in New York City, San Fransisco, and Washington, DC at Fine Chocolate Industry Association events, and I - and the entire chocolate community - have a profound respect for his craft and persona. He has a close relationship with the farmers who tend the cacao trees, and not only is he an outanding chocolate maker, but an exemplary human being, and an even better friend. I am so deeply honored he and his family business made this custom batch of chocolate for us with these rare beans. They taste first of bright, tart lingonberry, followed by hazelnut nuttiness.
